These doughnuts are an autumn tradition in New England orchards. Reducing the cider concentrates the apple flavour.

They're best eaten warm on the day.

Method

  1. Boil the cider until reduced to 100ml. Cool.
  2. Mix the flour, baking powder, spices and brown sugar. Stir in the cider, butter, egg and buttermilk to make a soft dough. Chill for 30 minutes.
  3. Roll out to 1.5cm thick and cut into doughnuts with holes.
  4. Fry at 180°C for 2 minutes each side. Drain and roll in cinnamon sugar.
Cook's noteThey can be baked in a doughnut tin at 190°C for 12 minutes.
