Treacle Toffee

Dark, glossy, brittle toffee made with black treacle. Traditional for Bonfire Night.

Treacle toffee is hard and crunchy with a slightly bitter edge. A sugar thermometer makes it foolproof.

Take care, as boiling sugar is extremely hot.

Method

  1. Grease a 20cm square tin.
  2. Put everything in a large heavy pan and heat gently, stirring, until the sugar dissolves.
  3. Turn up the heat and boil without stirring until it reaches 140°C on a sugar thermometer.
  4. Pour into the tin and leave until almost set, then mark into squares.
  5. Once completely cold, break into pieces with a small hammer. Store in an airtight tin.
