These amaretti are soft in the middle, not the crunchy kind. They're made with just almonds, sugar and egg white.

Serve with coffee or crumble over desserts.

Method

  1. Heat the oven to 170°C / 150°C fan. Line a baking tray.
  2. Mix the almonds and sugar. Whisk the whites to soft peaks and fold in with the extract.
  3. Roll into walnut-sized balls and coat in icing sugar.
  4. Put on the tray and press lightly. Bake for 15–20 minutes until cracked and lightly golden.
