This is one of China's most popular home-cooked dishes. It's quick, cheap and comforting.

Serve over rice for breakfast or lunch.

Method

  1. Beat the eggs with a pinch of salt. Scramble in 1 tbsp oil until just set. Remove.
  2. Stir-fry the tomatoes in the rest of the oil for 2–3 minutes until soft.
  3. Add the sugar and soy sauce.
  4. Return the eggs and toss gently. Scatter with spring onions.
