Called youtiao, these are a classic Chinese breakfast. They puff up dramatically when fried.

Rest the dough well for the best texture.

Method

  1. Mix the flour, baking powder, bicarbonate and salt. Add the oil and water and knead into a soft dough.
  2. Cover and rest for at least 2 hours.
  3. Roll out and cut into strips. Stack two strips and press down the middle with a chopstick.
  4. Stretch slightly and fry at 190°C for 1–2 minutes until puffed and golden.
