The po' boy is New Orleans' famous sandwich. Crispy fried prawns are one of the most popular fillings.

The spicy remoulade sauce ties it all together.

Method

  1. Mix the mayonnaise, hot sauce and mustard to make the remoulade.
  2. Soak the prawns in buttermilk. Mix the cornmeal, flour and Cajun seasoning.
  3. Coat the prawns and fry in hot oil for 2 minutes until golden.
  4. Split the rolls, spread with remoulade and fill with lettuce, tomato and prawns.
