Black bean sauce is made from fermented soybeans and has a deep, salty flavour. It's a takeaway classic.

Marinating the beef with cornflour keeps it tender.

Method

  1. Toss the beef with the soy sauce and cornflour.
  2. Stir-fry the beef in a very hot wok with 1 tbsp oil for 2 minutes. Remove.
  3. Stir-fry the onion and pepper in the rest of the oil for 3 minutes. Add the garlic.
  4. Add the black bean sauce and stock and bubble for 1 minute. Return the beef and toss.
