Coffee cake is meant to be eaten with coffee rather than flavoured with it. It's perfect for breakfast or brunch.

The sour cream makes it tender and moist.

Method

  1. Heat the oven to 180°C / 160°C fan. Line a 23cm square tin.
  2. Beat the butter and sugar, then add the eggs, sour cream and vanilla. Fold in the flour and baking powder.
  3. Rub the topping flour and cold butter together, then stir in the brown sugar and cinnamon.
  4. Spread half the batter in the tin, scatter with half the topping, then add the rest of the batter and topping.
  5. Bake for 40–45 minutes until a skewer comes out clean.
