Piadina is street food from Emilia-Romagna. The flatbreads need no yeast and cook in minutes.

Fill them while warm so the cheese melts.

Method

  1. Mix the flour, baking powder, salt, oil and water into a smooth dough. Rest for 20 minutes.
  2. Divide into 6 and roll each into a thin round.
  3. Cook in a hot dry pan for 1–2 minutes each side until spotted brown.
  4. Fill with ham, cheese and rocket, fold and serve warm.
