The name comes from 'minestra maritata', meaning married soup, as the meat and greens go so well together.

The small meatballs cook directly in the broth.

Method

  1. Mix the mince, breadcrumbs, Parmesan, egg and garlic. Roll into small marble-sized balls.
  2. Soften the onion and carrots in the oil for 5 minutes.
  3. Add the stock and bring to a simmer. Drop in the meatballs and pasta.
  4. Cook for 10 minutes until the pasta is tender and meatballs cooked.
  5. Stir in the spinach until wilted. Season and serve.
