Homemade granola is easy to make and keeps for weeks. A little egg white is the secret to big crunchy clusters, and a low oven toasts everything evenly without burning.

Don't stir it while it bakes if you want clusters. Just rotate the tray halfway. Add dried fruit after baking so it stays soft and chewy.

Method

  1. Heat the oven to 160°C / 140°C fan and line a large baking tray.
  2. Mix the oats, nuts, seeds, cinnamon and salt in a large bowl.
  3. Warm the maple syrup and oil together, pour over the oats and stir well, then stir through the egg white.
  4. Spread out on the tray and press down firmly. Bake for 35–40 minutes, turning the tray halfway, until deep golden.
  5. Cool completely on the tray without stirring, then break into clusters and mix in the dried fruit.
