Oatmeal gives the fish a crunchy, nutty coating. Herring is rich in healthy oils and very quick to cook.

Serve with a squeeze of lemon, grilled tomatoes or a poached egg.

Method

  1. Mix the oatmeal and flour with some salt and pepper.
  2. Dip the fillets in the egg, then press into the oatmeal to coat.
  3. Heat the butter and oil in a frying pan and cook for 3 minutes each side until golden and crisp.
  4. Serve at once with lemon.
