Fat rascals are a cross between a scone and a rock cake. They're famous in Yorkshire tea rooms.

Decorate with glacé cherries for eyes and almonds for teeth.

Method

  1. Heat the oven to 200°C / 180°C fan. Line a baking tray.
  2. Rub the butter into the flour until like breadcrumbs. Stir in the sugar, spice, zest and fruit.
  3. Beat the egg and milk, keeping a little for glazing, and stir in to make a soft dough.
  4. Shape into 8 rounds, brush with the reserved egg and decorate with cherries and almonds.
  5. Bake for 18–20 minutes until golden.
