Eton Mess

Eton Mess is said to date back to the famous school's annual cricket match against Harrow. It's one of the simplest desserts there is, and it's meant to look a bit messy.

Mash a few of the strawberries with sugar to make a quick sauce that ripples through the cream. Fold everything together just before serving so the meringue stays crunchy.

Method

  1. Mash a quarter of the strawberries with the icing sugar. Quarter the rest.
  2. Whip the cream to soft peaks and fold in the yoghurt and vanilla.
  3. Break the meringues into chunky pieces.
  4. Gently fold the meringue, quartered strawberries and most of the mashed strawberries into the cream, leaving it rippled.
  5. Spoon into glasses, drizzle with the remaining sauce and serve straight away.
