This traybake has everything you love about an apple crumble. There's a soft, spiced apple layer and a crunchy golden topping. It also has a buttery shortbread base, so it slices neatly into squares for lunchboxes, picnics and the office cake table.

Use a mix of apples if you can. Bramleys collapse into a soft sauce, while eating apples keep their shape, and together they give you the best texture.

Method

  1. Heat the oven to 180°C / 160°C fan. Grease and line a 20 x 30cm traybake tin with baking paper.
  2. Rub the butter into the flour until it looks like breadcrumbs, then stir in the brown sugar and salt.
  3. Press two-thirds of the mixture firmly into the tin to make an even base. Bake for 15 minutes until pale golden.
  4. Meanwhile, stir the oats and half the cinnamon into the remaining crumble mixture, squeezing it with your fingers to make some clumps.
  5. Toss the apples with the caster sugar, lemon juice, cornflour and remaining cinnamon. Spread over the hot base, then scatter the crumble on top.
  6. Bake for 30 minutes until golden and the apples are tender. Cool completely in the tin before cutting into 16 squares.
