This restaurant classic is surprisingly easy at home. Slow cooking makes the meat tender, and a hot oven crisps the skin.

Serve with Chinese pancakes, cucumber and spring onions.

Method

  1. Rub the duck with five-spice and salt.
  2. Put in a roasting tin with the ginger, spring onions, soy, wine and 200ml water. Cover with foil.
  3. Cook at 160°C / 140°C fan for 2 hours.
  4. Uncover, drain off the liquid and roast at 220°C / 200°C fan for 25–30 minutes until crispy.
  5. Shred with two forks and serve with warmed pancakes, hoisin, cucumber and spring onions.
