This is a British Chinese takeaway staple. The batter puffs up to make light, crisp balls.

Sparkling water makes the batter extra light.

Method

  1. Mix the flour, baking powder and salt, then whisk in the water to make a thick batter.
  2. Heat the oil to 180°C. Dip the chicken in the batter and fry in batches for 5–6 minutes until golden and cooked through.
  3. For the sauce, simmer the ketchup, vinegar, sugar and pineapple juice. Thicken with the cornflour mixed with a little water.
  4. Serve the chicken balls with the sauce.
