Created for the Queen's coronation in 1953, coronation chicken is sweet, creamy and gently curried. Mixing mayonnaise with yoghurt keeps it lighter without losing any richness.

Cooking the curry powder briefly in oil wakes up the flavour and takes away any raw, dusty taste. It's a great way to use leftover roast chicken.

Method

  1. Heat the oil in a small pan, add the curry powder and fry for 30 seconds until fragrant. Cool.
  2. Mix the spiced oil with the mayonnaise, yoghurt, mango chutney, sultanas and lemon juice. Season.
  3. Fold in the chicken until coated.
  4. Spread onto four slices of bread, add lettuce and a few flaked almonds, top with the remaining bread and cut in half.
