Pan haggerty is a Northumberland dish made in one heavy pan. The potatoes cook gently on the hob, then the top is browned under the grill.

Slice the potatoes as thinly as you can so they soften evenly.

Method

  1. Melt half the butter with the oil in a 25cm ovenproof frying pan and soften the onions for 10 minutes. Tip out.
  2. Layer the potatoes, onions and most of the cheese in the pan, seasoning each layer and finishing with potatoes.
  3. Pour over the stock, dot with the remaining butter, cover and cook on a low heat for 35 minutes until the potatoes are tender.
  4. Scatter over the last of the cheese and grill for 5 minutes until golden and bubbling.
