A great full English is less about any single ingredient and more about timing. The oven does the heavy lifting for the sausages and bacon, which frees up the hob for eggs and mushrooms so everything lands on the plate piping hot.
Buy the best sausages you can. They're the backbone of the plate. Fry the tomatoes cut-side down until they caramelise, and keep the eggs until last so the yolks stay runny.

- Heat the oven to 200°C / 180°C fan. Put the sausages on a lined tray and bake for 25 minutes, turning once, until golden and cooked through.
- Add the bacon to the tray for the final 10–12 minutes, until crisp at the edges.
- Meanwhile, heat 1 tbsp oil and the butter in a large frying pan. Add the tomatoes cut-side down and the mushrooms, season, and fry for 6–8 minutes until the mushrooms are golden and the tomatoes softened. Keep warm on the tray in the oven.
- Warm the beans gently in a small pan and toast the bread.
- Wipe out the frying pan, add the remaining oil and fry the eggs over a medium-low heat for 3–4 minutes, spooning hot oil over the whites until set.
- Plate everything up at once and serve with hot buttered toast and brown sauce.
