This is the pasta to make when you want something special but have almost no time. The prawns take just two minutes in the pan, and the sauce comes together while the pasta cooks.

Save a mugful of the starchy pasta water before you drain. It makes the sauce silky and helps it coat every strand.

Method

  1. Cook the pasta in a large pan of well-salted boiling water according to the packet instructions. Scoop out a mugful of pasta water before draining.
  2. Meanwhile, heat the oil and butter in a large frying pan over a medium-high heat. Add the prawns and cook for 1 minute each side until just pink. Lift out onto a plate.
  3. Reduce the heat, add the garlic and chilli and cook for 1 minute until fragrant but not browned.
  4. Pour in the cream, bring to a gentle simmer, then stir in the Parmesan and lemon zest.
  5. Add the drained pasta and prawns to the pan and toss well, adding splashes of pasta water until the sauce is glossy and coats the pasta.
  6. Stir through the lemon juice and parsley, season with black pepper and serve straight away.
Cook's notePrawns overcook very quickly and go rubbery — take them out of the pan as soon as they turn pink.
