This cake is all about richness. Brown sugar, buttermilk and a splash of hot coffee make a sponge that's intensely chocolatey and stays moist for days.

The fudge frosting is made with melted chocolate and butter, so it sets soft and glossy rather than sugary. Be generous. This is not the time for a thin coat.

Method

  1. Heat the oven to 180°C / 160°C fan. Grease and line two 20cm sandwich tins.
  2. Whisk the flour, cocoa, brown sugar, bicarbonate of soda and salt together. Add the eggs, buttermilk and oil and whisk until smooth, then whisk in the hot coffee.
  3. Divide between the tins and bake for 30–35 minutes until a skewer comes out clean. Cool for 10 minutes, then turn out onto a rack.
  4. For the frosting, melt the chocolate and butter together, then beat in the icing sugar and milk until glossy. Cool until spreadable.
  5. Sandwich the cakes with a third of the frosting, then spread the rest over the top and sides.
