This curry is a British Chinese invention, milder and sweeter than Indian curries. The sauce is thickened with a quick roux of flour and curry powder.

Serve with egg fried rice, or chips for the full takeaway experience.

Method

  1. For the sauce, cook the finely chopped onion in the butter for 5 minutes. Stir in the curry powder, five-spice, turmeric and flour for 1 minute.
  2. Gradually whisk in the stock, then add the soy sauce and sugar. Simmer for 10 minutes, then blend until smooth.
  3. Stir-fry the chicken in the oil for 5 minutes until golden. Add the onion chunks for 3 minutes.
  4. Pour in the sauce and peas and simmer for 5 minutes until the chicken is cooked through.
