This is a great way to use leftover roast chicken and ham. The sauce is thickened with a simple roux and finished with a little mustard.

Serve with mash and green vegetables.

Method

  1. Heat the oven to 200°C / 180°C fan. Soften the leek in the butter for 5 minutes.
  2. Stir in the flour, then gradually add the stock and milk. Simmer for 3 minutes until thick.
  3. Add the mustard, parsley, chicken and ham. Season and tip into a pie dish.
  4. Cover with the pastry, trim and crimp the edges. Brush with egg and cut a slit in the top.
  5. Bake for 30–35 minutes until puffed and golden.
