There are no olives here: the name comes from an old word for the little parcels. They're a thrifty way to make an inexpensive cut feel special.

Ask your butcher for thin slices of topside, or flatten them yourself between cling film.

Method

  1. Heat the oven to 170°C / 150°C fan. Mix the breadcrumbs, bacon, chopped onion, parsley, thyme and egg. Season.
  2. Lay out the beef, divide the stuffing between the slices, roll up and secure with cocktail sticks or string.
  3. Dust the rolls with flour and brown them in the oil in a casserole. Remove.
  4. Soften the sliced onion and carrots for 5 minutes, add the stock and Worcestershire sauce, then return the beef.
  5. Cover and cook in the oven for 1½ hours until tender. Remove the sticks and serve with mash and gravy.
Cook's noteIf the gravy is thin, simmer it uncovered on the hob for a few minutes before serving.
